Simmered Red Cabbage with Apples

Cabbage and apples seem to belong together.
In this recipe if added some carrots and onions.
This is a good dish to serve with roast pork.

Ingredients:
3 tablespoons olive oil
1 cup chopped onions (1 large onion)
3 apples, peeled, cored, quartered and sliced
4 tablespoons red wine vinegar
1 tablespoon brown sugar
2 teaspoons Dijon-style mustard
1 teaspoon caraway seeds
1/2 cup white wine or water
1 cup grated carrots (about 3 medium carrots)
4 to 5 cups shredded red cabbage (1 small head)
Salt to taste
Black pepper to taste

Directions:
Heat the oil in a heavy pan over medium setting.
Add the onions and apples, and saute
until the apples soften (about 8 minutes).
Add the vinegar, sugar, mustard, and caraway seeds.
Heat for a few minutes to melt the sugar.
Add the wine or water, carrots, and cabbage.
Add seasonings to taste.
Simmer, covered, for 25 to 35 minutes.
