I use this easy batter to coat fried catfish.
It would also be good to coat shrimp and
just about any firm fried fish.
Ingredients:
3/4 cup milk
2 eggs
1 cup flour
1/4 teaspoon salt
dash pepper
1 teaspoon baking powder
1 tablespoon oil
Directions:
Hand mix with fork, don't beat hard.
Dip fish in batter, let drip and fry
in hot oil until golden brown and crispy.
