This is a great rcipe for the best tasting
grilled fresh tuna you'll ever have.
it's very important to check seasonings,
the tuna may need more salt and pepper.
Ingredients:
11/2 pounds tuna steaks
4 cloves garlic, peeled and minced
1/3 cup olive oil
1 28-ounce can crushed tomatoes
Salt and freshly ground black pepper to taste
1 pound spaghetti
1/3 cup small capers, drained
1/2 cup kalamata olives, without pits, chopped
1/2 cup fresh basil, chopped
1/4 cup chopped Italian parsley
Directions:
Heat a barbecue grill or broiler.
On the stove, place a pot of salted water over high heat.
In a large pan, saute the garlic in the olive oil.
Add the tomatoes, season with salt and pepper,
and simmer for about 15 minutes.
Brush the tuna with some olive oil, salt and pepper,
and grill about 3 minutes per side for rare.
Undercook it slightly because it will continue
cooking when added to the sauce.
Remove the tuna from the grill or broiler
and slice into 1/2-inch-thick strips about 1-inch long.
When the water is boiling, add the spaghetti.
Cook until al dente. While the spaghetti is cooking,
add to the tomato sauce the capers, olives and tuna.
Bring to a simmer and cook for 5 minutes.
Stir in the fresh basil and parsley.
Drain the spaghetti and return to the large cooking pot.
Add 1/2 of the sauce and toss gently,try not to break up the tuna. Transfer to a serving platter and top with remaining sauce.
