Spicy Grilled Salmon and Eggplant

Grilled eggplant is such a great go along with salmon.
I usually grill salmon on foil, in this recipe I put
it directly on the grill and it got some grill marks.

Ingredients:
I large eggplant
4 Salmon steaks (about 1/2 lb each)
1 lime
1 lemon
1/4 cup olive oil
1 teaspoon Greek or Italian dressing
1/8 teaspoon hot red pepper flakes
1/4 teaspoon freshly ground black pepper
2 cups hot cooked rice

Directions:
Remove the stem and end of eggplant and slice on a diagonal,
cutting slices approximately 1/4 inch thick.
Place eggplant slices and the salmon steaks
in a glass 13 x 9 inch baking dish.
Cut the lemon and lime in half
and squeeze the juice into a small bowl.
Stir in the oil, seasoning, pepper flakes and black pepper.
Pour the mixture over the salmon steaks and eggplant.
Cover and refrigerate for 1 to 1 1/2 hours, turning the salmon and eggplant once.
Preheat the grill.
Place the salmon steak on the grill and cook for 6 minutes,
turning once, or until the salmon is just opaque in the center.
After 2 minutes, add the eggplant to the grill and grill for 5 minutes, turning once, or until the eggplant is browned and tender,
serve the salmon steaks and eggplant with the rice.
