Apple Cinnamon Rice Salad
with celery,onion and walnuts

I started cooking rice in apple juice years ago,
it gives the rice a sweet and clean flavor.
This is very good tasting apple and rice salad.

Ingredients:
2 tablespoons butter
1 teaspooon ground cinnamon
2 medium apples, cored and chopped
1 cup chopped walnuts
1/2 cup chopped onion
1/2 cup sliced celery
3 cups cooked brown rice (cooked in equal parts water and apple juice)
1/2 teaspoon salt or to taste

Directions:
Heat butter and cinnamon in large skillet over medium-high heat.
Add apples, walnuts, onion and celery;
saute until vegetables are tender crisp.
Stir in rice and salt; heat thoroughly.
