Baked Chicken Parmesan
in a Puttanesca Sauce

I use a Puttanesca Sauce Mix at home
when I want to jazz up our spaghetti.

Ingredients:
1 (1.4 oz) packet Puttanesca Sauce Mix
1 can crushed tomatoes
4-6 boneless, skinless chicken breasts
2 cups mozzarella cheese
1/2 cup grated Parmesan cheese (divided)
8 oz spaghetti (cooked as directed)

Directions:
Preheat oven to 350 degrees F.
Cut chicken breasts in half crosswise
and pound to 1/2 inch thickness.
In an 8x8-baking dish or similar sized dish,
pour in the crushed tomatoes.
Stir in Laurie’s Kitchen Puttanesca Sauce Mix
and 1/4 cup of Parmesan cheese.
Add chicken breast, turning to coat with sauce.
Cover with foil and bake 30 minutes.
Meanwhile, cook pasta as directed.
Remove foil from dish and top with
remaining Parmesan and mozzarella cheese.
Continue to bake until cheese is melted and bubbly.
Serve over cooked spaghetti.
