There are so many recipes out there for
macaroni and cheese, here's a good one.
Ingredients:
1 package (8 ounces) macaroni
3 tablespoons butter
6 tablespoons flour
2 cups tomatoes
1 teaspoon salt
1 onion, finely chopped
1 egg, beaten
1 1/2 cups creamed cottage cheese
Pepper, to taste
Buttered bread crumbs
Directions:
Cook macaroni in 2 or 3 quarts rapidly boiling,
salted water until tender, about 20 minutes;
drain and pour into a buttered casserole dish.
Melt butter in a saucepan; blend in flour and
cook over low heat until mixture is brown.
Remove from heat. Add tomatoes, salt, onion,
egg, cottage cheese and pepper, mixing well.
Pour mixture over macaroni in dish;
stir slightly to evenly distribute.
Sprinkle with crumbs and bake at
350 degres F. for 45 minutes. Serve warm.
