Baked Ricotta Cheese
Leftover Pasta Shells

I had some left over pasta shells with
tomato sauce just hanging out in the
refrigerator so I decided to put together
a baked Ricotta cheease dish with them.
It's easy to throw together and oh so good!

Ingredients:
2 cups cooked pasta shells (with some tomato sauce)
2 eggs
2 cups Ricotta cheese
1/2 teaspoon salt
1 tablespoon dried parsley
olive oil

Directions:
Preheat oven to 350 degrees F.
Oil bottom of a 2-qt casserole dish.
Put cooked pasta in dish.
In a mixing bowl whisk eggs,salt and parsley.
Add ricotta cheese a little at a time mixing
into egg until well combined.
Place on top of pasta in dish and spread evenly.
Cover with aluminum foil and bake for 30 minutes,
remove and bake another 30 minutes to brown top.
