Basmati Rice, Peas, Corn,
and Roasted Red Bell Peppers

This is a recipe I came up with as a side dish
to serve along with soy marinated chicken fillets.
It's an easy recipe to put together,
colorful and goes good with the chicken.

Ingredients:
2 cups water
1 cup basmati rice
1 roasted red bell pepper
1 cup frozen sweet corn
1 cup frozen green peas
12 slices carrot, peeled
1 tablespoon butter

Directions:
In a pot bring water to a boil,
add rice, lower heat and cover.
Cook for 20 minutes, add more water if needed.
When rice is cooked add corn,peas and pepper to pot.
Using a vegetable peeler, peel carrot right into pot.
Mix to combine, cover and shut off heat.
Let sit for thirty minutes,
then add butter, fluff up and serve.
