Fresh Basil and Mozzarella
Balsamic Reduction Salad

This dish makes a great start to most any meal.
The basil really compliments the tomato
and mozzarella but the real treat
is the reduced balsamic vinegar.

Ingredients:
Fresh basil leaves
Fresh roasted peppers
Fresh mozzarella
Cherry tomatoes
1 cup reduced balsamic vinegar

Directions:
In a saucepan reduce balsamic vinegar slowly until
it becomes a syrup the consistency of maple syrup.
Place basil leaves on dish,
place sliced mozzarrella on top of each leaf,
and a slice of roasted pepper on top.
Place a slice of cherry tomato on top
and drizzle balsamic vinegar over top.
