These meatballs have an unoriginal sweetness
to them that will catch any body's taste buds
happily by surprise, these are really good.
I made about 50 little meatballs.
Everyone loved the different sweetness
of these little treasures and they were so easy.
You could make ahead and freeze until ready to use.
You could also cook them as directed and freeze.
Then they will only need to be heated through
for a quick and easy appetizer for unexpected company.
Ingredients:
2 lbs ground beef
2 eggs
1/2 cup bread crumbs
1 cup brown sugar
1 jar mild salsa
1/4 tsp salt or to taste
1/4 tsp pepper
1/4 tsp basil
Olive oil
1/4 tsp garlic salt
1/4 tsp minced onion
Directions:
Mix beef, eggs, bread crumbs, 1/4 cup brown sugar,
1/4 cup salsa, salt, pepper, basil, onion and garlic.
Use small cookie or melon baller to scoop small amounts
of beef mix and roll in hands to make uniform in size.
Do this until all mix is used. Heat a skillet on stove top.
Drizzle a little olive oil in pan on medium heat.
Add the rest of salsa from jar and brown sugar.
Stir until well blended while continuing on medium heat.
Add small meatballs gently to sauce pan and cover.
Cook on medium heat for about 20 minutes
and until centers are completely cooked.
