Perfect Summertime Picnic
Creamy Potato Salad

Potato salad is one of the dishes that
goes really well with a juicy barbecued steak.
Here is one of my recipes for a classic potato salad.
Add fresh tomato and you’ve got a winning meal.

Ingredients:
1 cup mayonnaise
2 tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
1/2 cup sliced celery
1/4 cup finely chopped red onion
8 potatoes, peeled, cubed,cooked, and cooled
6 hard-boiled eggs, chopped
1/4 cup chopped sweet gherkin pickles
1/2 cup frozen peas, cooked
1/2 cup radish, sliced

Directions:
Combine first 5 ingredients in a small bowl.
Mix well and set aside. In a large bowl
combine remaining ingredients.
Stir in the dressing to coat the potatoes.

I have a potato salad recipe that my family and friends fight over. It uses no mayo (I loathe the taste). Instead, I use all sour cream, or half sour cream and half plain yogurt. Besides all the other standard ingredients, I use green onions in lieu of white or red, black and green olives, diced bell peppers in assorted colors, fresh minced dill, 2 tsp of good Italian seasoning, diced dill pickles (not the kosher)and diced jalapenos for punch power.
