Seared Lemon Salmon Fillets
over Creamy Butternut Squash

I made this recipe using fresh salmon
but you could use any fish you wish to.
Cooking the squash in the microwave
saves a lot of time and it's done at
about the same time as the salmon is.

Ingredients:
2 fresh salmon fillets
1 fresh lemon, juice of
1 tablespoon sweet smoked paprika
1 butternut squash
2 tablespoons butter
1/4 cup heavy or lite cream
1/4 teaspoon salt
1/4 teaspoon black pepper
fresh parsley - garnish
lemon wedges - garnish

Directions:
Place salmon in a dish, season with paprika,
squeeze lemon on salmon, set aside.
Preheat a frypan to medium heat.
Peel and de-seed butternut squash, cut into cubes.
Place squash in a glass dish with cream and microwave
on high power for ten minutes, stir and cook until done.
While squash is cooking melt butter in frypan,
place salmon skin side down in frypan.
Saute three minutes, add turn salmon over,remove skin,
cover pan and turn off heat, let sit, covered 5 minutes.
Plate squash and place a salmon filet on top of squash.
Garnish with fresh parsley and lemon wedges.
