Soy Sauce Marinated and Herbed
Pan Fried Chicken Breast Fillets

This recipe is so good! Awesomely good.
I started out with two boring chicken fillets
and ended up with great tasting chicken.
This is the kind of dish you go back for
seconds and even third helpings, seriously!
I found myself going after every last morsal
and tiny bit of chicken on the plate.

Ingredients:
2 chicken breast fillets
1/4 cup all-purpose flour
2 tablespoons low sodium soy sauce
4 tablespoons olive oil for frying in

Spice mixture:
1/4 teaspoon smoked paprika
1/4 teaspoon brown sugar
1/4 teaspoon ancho pepper
1/4 teaspoon black pepper
1/4 teaspoon turmeric
1/4 teaspoon coriander
1/4 teaspoon garlic powder
1/4 teaspoon cinnamon
1/4 teaspoon anise powder
1/4 teaspoon salt

Directions:
In a bowl combine all spices to make a mixture.
Drizzle soy sauce into a flat bottom dish.
Wash chicken and place in one layer in dish.
Sprinkle spice mixture only on top of chicken.
Let marinate 1 hour in refrigerator.
Heat olive oil in saute pan,
remove chicken from marinade and dredge in flour.
Place chicken in saute pan, cook for 3-4 minutes,
turn chicken over and place a cover on pan.
Let cook for another 3-4 minutes.
Remove cover and turn chicken over, replace cover.
Turn off heat and let chicken rest 2 minutes.
Remove to a serving plate. (this was so good!)
I served it with a vegetable medley in white rice.
