Sunday Dinner Roast Beef

This recipe puts out the perfectly cooked roast beef.
I don't always use a meat thermometer but it works best.
Serve with sides of baked potatoes and a vegetable.

Ingredients:
1 3-4 pound Roast
3 tbs. crushed garlic
1 tsp. salt
1/2 tsp. pepper
1 tbs. paprika
1/4 tsp. crushed rosemary
1/2 cup olive oil
freshly ground black pepper to taste
salt to taste

Instructions:
Preheat oven to 500 degrees F.
Mix dry ingredients and oil in a small bowl.
Liberally salt and pepper roast to taste.
Spread and rub mixture on meat,
place meat thermometer into center of roast
and cook at 500 degrees for 20 minutes.
Reduce oven to 350 degrees and continue cooking
another 40 minutes before beginning to check thermometer for doneness.
When thermometer registers about 5 degrees from desired doneness,
remove roast, wrap in foil and allow to sit for 10-15 minutes.
Unwrap, remove to cutting board, slice and enjoy!
