Andagi - Okinawan Doughnuts

Andagi is an Okinawan deep fried doughnut.
It is also known as "sata andagi."
Andagi is the Okinawan term for deep fried dishes.
Although Okinawans in Hawaii use the term
andagi only to refer to sata andagi,
savory as well as sweet deep fried
foods are all properly called andagi.

Ingredients:
Salad oil for deep frying
4 cups flour
1 1/2 cups raw sugar
1/2 cup instant non-fat dry milk
4 teaspoons baking powder
1 1/2 teaspoons salt
4 eggs, beaten
1 cup water
2 tablespoons salad oil
1 1/2 tablespoons vanilla
1 1/2 teaspoons almond extract

Directions:
Heat oil to 375 degrees F.
In a bowl, combine flour, sugar,
dry milk, baking powder, and salt.
Combine remaining ingredients.
Add to dry ingredients and mix
until dry ingredients are moistened.
Drop dough by spoonfuls or by hand into hot oil;
fry until golden brown; drain on paper towels.
