Baked Mashed Potatoes with
Parmesan and Cream Cheese

I had some mashed potatoes left over and
created this creamy and cheesy casserole.

Ingredients:
3 cups leftover cooked mashed potatoes
1 package (8-oz) cream cheese; room temperature
1/4 cup unsalted butter
1/2 cup sour cream
1 1/2 cup milk
1/2 cup grated parmesan cheese
2 large eggs; slightly beaten
1/4 cup onions; finely chopped
Italian flavored bread crumbs
1 teaspoon salt or to taste
ground black pepper to taste

Directions:
In a stand mixer bowl, combine potatoes
with cream cheese and butter.
Beat until cheese and butter are combined.
Mix in sour cream. Add eggs and onions to milk.
Add this to the potatoes. Add salt and pepper;
beat well until light and fluffy.
Stir in the parmesan cheese.
Place in greased casserole dish, coated liberally
with Italian flavored with bread crumbs.
Score the top with a fork for appearance
and bake in preheated oven at 350 degrees F.
for 45 minutes or until lightly brown on top.
Let them cool for a few minutes before serving.
