Having some home made guacamole leftover in the
refrigerator, I decided to make a pasta salad with it.
This came out really good for a quick healthy lunch.
Serve it along with fresh orange segments, it's good!
Ingredients:
1 cup prepared guacamole
2 cups bow tie pasta, uncooked
1 cup frozen mixed vegetables
1 can tuna, drained
2 tablespoons olive oil
2 tablespoons butter
salt to taste
black pepper to taste
Directions:
Cook bow tie pasta until al dente.
Put butter and oil in a mixing bowl.
Remove pasta from water, place in bowl, add tuna and set aside.
Add frozen vegetables to pan, adding more water if needed.
Cook until heated through and soft.
Season to taste, add pasta and tuna.
Mix to combine, add guacamole and mix to combine.
Serve warm with orange segments on the side.
