Impossible Coconut Custard
Fresh Strawberry Topped Pie

This custard pie forms its own crust during baking.
It's easy to prepare with fresh strawberries on top.

Ingredients:
Pie Ingredients:
4 eggs
2 cups Half and Half cream
1 cup sweetened flaked coconut
1/2 cup sugar
1/2 cup all-purpose flour
3 tablespoons Butter, melted
1 teaspoon vanilla

Topping Ingredients:
Freshly grated whole nutmeg
Fresh strawberries, hulled and cut up

Directions:
Heat oven to 325 degrees F.
Grease and flour 9-inch pie pan; set aside.
Place half and half in 5-cup blender container;
add all remaining ingredients except nutmeg and strawberries.
Cover; blend at medium speed until well mixed (1 to 2 minutes).
Pour egg mixture into prepared pie pan; sprinkle with nutmeg.
Bake for 40 to 50 minutes or until a
knife inserted in center comes out clean.
Arrange strawberries on top of pie.
Serve warm or chilled with more strawberries. Store refrigerated.
