Lighter Than Air Biscuits
Made with Bisquick Mix

This is a simple recipe for making the
lightest, fluffiest and airy biscuits.
It's made with Bisquick mix and also
gets a lift from a little baker's yeast.

Ingredients:

2 1/2 cups Bisquick or Jiffy biscuit mix
1 tsp Baking Powder
1/2 tsp Salt
1/4 cup Shortening
2/3 cup Low Fat Milk
1 package yeast
1/2 cup warm 110 degree F. water

Directions:
In a small bowl mix yeast with warm water, set aside 15 minutes.
Place all other ingredients except milk in another mixing bowl.
Mix by hand about 2 minutes or with mixer about 1 minute.
Add yeast water to bowl with Bisquick, mix to combine.
Add milk and mix until dough starts to cling to beater.
Avoid overmixing. Turn dough onto lightly floured surface
and knead about 20 seconds or until smooth.
Roll to 1/2" thickness, cover with towel and let rise 30 minutes.
Cut with 2-1/2" biscuit cutter.
Place on greased cooking sheet and brush
with melted butter if desired.
Bake at 450 degrees F. for 12 to 15 minutes.
Makes about 8-10 biscuits.
