These make for a great addition to an omelete.
A pasta salad or added into a home made soup.
Ingredients:
4 cups fresh whole mushrooms, stemed and quartered
2 garlic cloves, peled and minced
1/2 cup red onion, chopped
6 tablespoons red pepper, chopped
2 tablespoons olive oil
1/2 teaspoon dried parsley
Lemon juice
Directions:
Heat oil to high in large saute pan.
Add onions, peppers and garlic.
Saute 1 minute and add mushrooms.
Mix to combine constantly for 2 minutes.
lower heat and saute a few minutes until mushrooms
loose some of ther water and shrink in size.
turn off heat and move mixture to the sides of pan.
Let cool before placing in a covered container.
Lemon juice may be added at this time.
Refrigerate until ready to use.
