I wanted to make a salad with
pan fried tilapia and Chick Peas
but allthe recipes I found where
to me very bland, so I came up with this
salad using hot salsa for an added kick!
Ingredients:
1 Tilapia fillet, thawed if needed
6 ounces hot tomato salsa
1 can chickpeas, drained and rinsed
1 carrot, peeled and shredded
1 small red pepper, diced
1 small red onion, peeled and chopped
1 garlic clove, peeled and minced
1 Tbsp lemon juice
1 Tbsp olive oil
1 Tbsp dried parsley
1/4 tsp salt
1/4 tsp pepper
lettuce leaves to plate
Shaved parmesan cheese
Directions:
Dredge tilapia fillet in flour.
Heat a fry pan, add oil and fry tilapia
just until browned, about 2 minutes each side.
In a bowl combine salsa, chick peas, carrot
pepper, onion and garlic, toss to combine.
Add lemon juice, olive oil, salt and pepper.
On four plates place some lettuce leaves.
Mix salad well and place evenly on lettuce leaves.
Divide tilapia in four and top the salad.
Top with shaved parmesan cheese.
Drizzle with more olive oil and lemon juice.
