Baked Plum Tomato
Broiled Roma Tomatoes

One of the best ways to enjoy fresh tomatoes
is to place them under the broiler for a minute
and then finish baking them in the hot oven.

Ingredients:
6 plum tomatoes, washed, de-stemmed and halved
1/4 cup feshly grated parmesan cheese, (about)
1 tablespoon dried oregano
2 tablespoons olive oil
1/4 teaspoon salt or to taste

Directions:
Place some aluminum foil on a metal baking plate.
Arrange tomato halves around plate.
Sprinkle with salt to taste.
Sprikle with oregano, parmesan cheese and
drizzle with olive oil.
Place under a broiler for only a minute or so,
just to get the cheese a little browned.
Move plate of tomatoes to a lower oven rack.
Turn oven to bake at 350 degrees F.
Bake them for about 15 minutes to warm through.
