With Greek influences of lemon and
olive oil this bean salad is a good
cold summer salad to serve on a hot day.
It's got onion, pepper and tomato in it.
Ingredients:
1 can (15.5-oz.) Garbanzo Beans, rinsed and drained
1/2 cup thinly sliced red onion
1/2 cup chopped tomato
1/2 cup chopped green bell pepper
3 tablespoons red wine vinegar
3 tablespoons apple cider vinegar
2 tablespoons fresh lemon juice
2 teaspoons olive oil
1-3 tablespoons minced garlic
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Preparation:
Combine all ingredients in a large bowl.
Let marinate at room temperature several
hours then refrigerate to serve cold.
