Here is an easy recipe to make a taco salad
that has chicken, cheese, lettuce and beans.
In place of chicken I've made this salad
with cut up grilled steak. And also
have added some cooked tiny shrimp.
Ingredients:
1 can (8 oz.) Kidney Beans, drained
1 can (14-1/2 oz.) Diced Tomatoes, drained
2/3 cup hot or mild salsa
1/4 cup vegetable oil
1/4 cup vinegar, such as red wine or cider
1 (about 10 to 12 cups) large head romaine lettuce, chopped
3 cups chicken, grilled and cut bite-size
1 cup (4 oz.) sharp Cheddar cheese, shredded
3 cups broken tortilla chips
Directions:
Make dressing by blending tomatoes, salsa,
oil and vinegar; stir briskly with fork.
Toss lettuce with chicken, beans and cheese in large bowl.
Add dressing as desired. Add chips; toss. Serve immediately
