In my vegetable garden fresh green peas
grow right next to a large patch of mint.
One day I made this recipe for peas and mint.
Came out great, everybody went back for more!
Ingredients:
4 cups fresh green peas
1/2 cup fresh mint leaves, washed
2 tablespoons water
2 tablespoons butter
1/2 teaspoon salt or to taste
1/4 teaspoon sugar or to taste
3 medium green onions, sliced
1 dash ground black pepper
Lemon wedges, de-seeded
Directions:
In a soup pot add water, peas, butter, onions,
salt, sugar and pepper to boiling; reduce heat.
Cover and cook about 8 minutes
or until peas are tender.
Place in a serving bowl,
add fresh mint and serve
with lemon wedges on the side.
