A good recipe for a melon salad,
with ham, cheese and artichokes.
Ingredients:
1/2 medium size honeydew or cantaloupe melon
1/4 pound prosciutto, thinly sliced
1 jar artichokes, marinated in olive oil
1/4 pound provolone cheese, sliced
Directions:
Cut rind off melon and cut into 2-inch long strips.
Wrap each melon strip in a piece of prosciutto
and use a toothpick to hold in place.
Cover with plastic wrap. Refrigerate until serving.
Arrange the wrapped melon, artichokes and
provolone cheese decoratively on a platter and serve.
Garnish with a sprig of fresh garden cilantro.
