Dried Navy Beans
Cooked Good and Long

I say cooked good because you can sure
cook them wrong by letting them boil.
Dried beans need to be soaked overnight in water.
Then drained and cooked long and slow,
never boiling. I just went to my stove
to check them and sure enough they were
bubbling away like a volcano.
The beans split open!
This happens when one doesn't
watch the bean pot.
They aren't cooked enough yet
but I just can't resist
and am eating some right now.
They taste great!
and the liquid they are
in is simply addictive.
So mabe I'll soak some more
and tomorrow make it again.

Ingredients:
2 cups dried navy beans
water to cover them and more to cook them
1 onion, peeled and chopped
2 garlic cloves, peeled and smashed
1/4 cup ketchup
1/4 cup molasses
1/4 cup barbecue sauce
2 tablespoons apple cider vinegar
1 teaspoon prepared mustard, with seeds
1/2 teaspoon dry mustard powder
1/2 teaspoon freshly ground black pepper
3 slices bacon, cooked and chopped fine
3 tablespoons sweet smoked paprika
2 drops liquid smoke
2 drops Gravy Master

Directions:
Place beans in a pot, cover with water
to soak overnight. The next day drain
water from beans and cover with fresh.
Add onion, garlic and bring pot to a boil.
Lower heat to a simmer,add all other ingredients.
Cover and simmer for 3 hours or so
until beans are soft and done.
Remember never let the pot come to a boil.
