This is one of my best and easiest recipes.
It's baking or roasting a few pieces of chicken
along with some fresh root vegetables in one pan.
It takes about ten minutes to put together,
throw it in a pre-heated oven for about 1 hour.
Dinner couldn't be any easier on a busy day.
Ingredients:
4 chicken parts, breasts, legs or thighs
1 onion, peeled and cut in quarters
1 carrot, peeled and cut in 1/2" slices
1 or 2 celery stalks, peeled and sliced
1 orange, peeled and cut in wedges
1 or 2 pieces fresh ginger
2 teaspoons Old bay Seasoning
1/2 teaspoon black pepper
Directions:
Pre-heat oven to 350 degrees F.
Take a small roasting pan with cover.
Line pan with two pieces of aluminum foil,
big enough to cover bottom and sides of pan.
I criss cross them, one side to side and
another end to end.
Place all vegetables you wish in pan.
Wash chicken pieces and season with
Old Bay Seasoning and black pepper.
Place on top of vegetables.
Cover and place in oven for about 1 hour.
