Pork Butt Shoulder
Marinated Smoked

It can get confusing when trying to buy a good
piece of pork to marinate and cook in the smoker.
The package I bought says it's a shoulder butt.
That's two different parts of the pig isn't it?
Well I marinated it in a plastic bag,refrigerated,
then cleaned the marinade off of the roast, and
in the meat smoker at 225 degrees F. for 6 hours.
It came out nice and juicy with a nice flavor.
This is the marinade that I used.

Ingredients:
1 package onion soup mix
1/4 cup bottled Italian dressing
1/4 cup soy sauce
1/4 cup olive oil
4 tablespoons red wine vinegar
2 tablespoons sweet smoked paprica
2 tablespoons apple barbecue sauce
1 teaspoon ground black pepper
1 teaspoon salt

Directions:
Wash the pork shoulder butt and pat dry with paper towels.
Sprinkle with salt, pepper and paprika.
Place in a sealable plastic bag;
onion soup mix, soy sauce, bbq sauce,
vinegar, olive oil and garlic powder.
Seal and rub real good.(place in a bowl)
let sit in refrigerator at least 4 hours or overnight.
Remove roast and wash off marinade, season again with dry
seasonings if desired. Place in pre-heated smoker for 4 hours.
Inturnal temperature of roast should be 185 degrees F.
remove and cover with aluminum foil and place back in smoker
for 1 to 2 more hours or until done.
