These potatoes are creamy soft on the inside
with a sweet butter crisp coat on the outside.
Ingredients:
4 Potatoes
Water (as required)
6 tablespoons Sugar
5 tablespoons Butter
Directions:
Peel the potatoes and dice them.
Add the potatoes to a large saucepan
and pour enough water to cover them.
Boil the water on high and reduce to low.
Boil for 15 minutes or until just tender.
Remove the potatoes and rinse them in cold water.
Dry them real good.
Place a frying pan on heat and
melt sugar till it turns golden.
Add butter and potatoes to the caramelized sugar.
Stir fry the potatoes on high until they turn brown,
stirring constantly. Serve immediately.
