This recipe has a lot of tropical flavors,
pineapple, lime juice and macadamia nuts.
Ingredients:
1/2 pound cooked, peeled and deveined rock shrimp
6 ounces soft cream cheese
1/2 cup chopped macadamia nuts
1/2 cup drained, crushed pineapple
1/4 cup chopped ripe olives
1 tablespoon lime juice
6 slices, white bread
6 slices, wheat bread
un-salted butter
Directions:
Chop rock shrimp.
Combine all ingredients except bread and butter; mix well.
Lightly butter bread. Spread equal amounts of shrimp
mixture on 6 slices of white bread;
cover with remaining slices of wheat bread
and cut each sandwich into four pieces diagonally.
