Stir Fried Rice with
Mushroom and Spinach

This is a fast and good recipe for a chicken
that's stir fried with spinach, mushrooms.
You can add any other vegetables you have on hand.

Ingredients:
2 cups brown rice, cooked
1 lb. chicken breast cut into bite-size pieces
1 box frozen spinach (10 oz.) thawed and drained
4 oz. sliced fresh mushrooms
2 Tablespoons lite soy sauce
2 Tablespoons canola oil

Directions:
In a skillet, heat oil over medium high.
Sauté chicken for 5 minutes or until cooked.
Add mushrooms and spinach to the skillet, cook 2 minutes.
Stir in soy sauce and serve over rice.
