Fresh sweet strawberries and watermelon
go well together in this spring salad.
With cooked shrimp as the star ingredient.
I serve this on a bed of fresh lettuce.
Ingredients:
2 cups halved strawberries
2 cups watermelon cubes
2 cups cubed cantaloupe
1 lb. shrimp,cooked,shelled
1-1/2 cups lemon yogurt
1 tsp. lemon juice
2 Tbsp. honey
salt to taste
pepper to taste
Directions:
In small bowl, combine yogurt,
lemon juice and honey and blend well.
In large bowl, combine remaining ingredients.
Pour dressing over and toss very gently to coat.
Season with salt and pepper, serve immediately.
