This is a recipe for making a pizza crust
with fresh zuccini and eggs for the dough.
It's more like a frittata than a dough.
Ingredients:
4 cups grated zucchini
2 eggs, slightly beaten
1 cup grated Cheddar cheese
1 cup grated mozzarella cheese
Directions:
Squeeze out moisture from the zucchini.
Combine all ingredients. Press into a
15 x 10-inch greased jellyroll pan.
Bake 10 minutes at 400 degrees F.
Add your favorite pizza sauce and toppings.
Bake 30 minutes more at 400 degrees F.
