Six avocados makes for a better, thicker soup
but tend to serve the same number of people.
Ingredients:
4 avocados
1 T. salsa
1 T. lemon juice
3 cups of plain yogurt
1 T. olive oil
2 tomatoes, peeled, seeded and chopped
1/2 cup of very rich chicken stock
Directions:
Mash two avocados with the warm chicken broth
and whisk into the yogurt. Add lemon juice,
oil, salsa, chopped tomatoes. Chill.
Just before serving slice the other two
avocados (chilled) into the soup.
