Carrot and Parsnip Latkes

One day I found that I had a ton of
carrots from the garden and made Latkes.

Ingredients:
2 carrots, peeled
5 parsnips, peeled
1/4 cup flour
2 eggs, lightly beaten
1 tsp. chives or green onion, finely chopped
1 tsp. parsley, finely chopped
1/4 tsp. salt and pepper, or to taste
oil for frying

Directions:
Grate the carrots and parsnips,
and toss with flour, mix with other
ingredients until evenly moist.
Heat a little oil, peanut oil is
a good choice, until just smoking.
Drop in the batter by large spoonful
and flatten. Reduce heat to medium
and fry until brown on both sides.
Makes 16 to 18 two inch pancakes.
