These are great party appetizers.
Cherry tomatoes are hollowed out
and filled with crumbled bacon,
chopped lettuce and topped with
an herbed mayonnaise dressing.
People will enjoy the old-fashioned
BLT taste and may hardly miss the bread.
Ingredients:
12-16 cherry tomatoes
5 bacon slices
1/2 cup mayonnaise
Fresh basil leaves, chopped
1 tsp pepper, or to taste
1 cup finely chopped romaine lettuce
1 green onion with top, finely chopped
Directions:
Cut a thin slice from the top of each
cherry tomato and hollow out center,
so it resembles a small cup.
Turn tomatoes upside down to drain on paper towels.
Cook, drain and finely chop or crumble the bacon.
Mix mayonnaise, basil and pepper together
to make an herbed mayonnaise. In each tomato cup,
place a small amount of bacon, lettuce
and a dab of herbed mayonnaise.
Top with a few pieces green onion;
serve as an appetizer for a light lunch.
