You might think that I'm exagerating,
this is the best pizza I've ever made.
And I've made hundreds over the years.
Making this will impress your family.
As in all pizza recipes, quantities are
variable depending on number of pizzas.
Ingredients:
pizza dough
eggplant, cut up skin on
cherry tomatoes, halved
garlic, peeled and crushed
olive oil
salt to taste
black pepper to taste
fresh mozzarella cheese
freshly grated Parmesan cheese
fresh or dried oregano
Directions:
Make a pizza dough or buy one.
Spread the eggplant and tomatoes out
onto a large baking sheet, sprinkle with oil
and put them under the broiler for 3 minutes.
After 3 minutes give the eggplant a stir,
shaking the pan a bit. Return the pan
to the oven for another 3 minutes.
Remove the pan from the oven and set aside.
Preheat oven to 500 degrees F.
Roll out your dough in another baking pan.
Top with mozzarella cheese.
Lightly drizzle some olive oil over dough.
Place the mozzarella slices evenly
all over the surface of the crust.
Place eggplant and tomatoes around top,
sprinkle with parmesan cheese.
Put in oven for about 10 to 12 minutes,
or until the cheese is melted and bubbly
and the crust is golde, but not too brown.
Remove from oven, cut into serving slices.
