This is a summer salad from the gods.
It's easy to make and good for you.
You must use fresh herbs in this one.
Looking at the ingredients list here,
I should have called this the 2 salad!
Ingredients:
2 cans chick peas, drained and rinsed
2 tablespoons olive oil
2 fresh lemons, zest of
2 tablespoons fresh thyme
2 cups no-fat sour cream
2 tablespoons choppped red onion
2 grinds black pepper
Directions:
Place chick peas in a glass bowl,
add thyme, lemon zest and olive oil.
Cover with plastic wrap and microwave,
you guessed it, for two minutes.
Remove to refrigerator for 2 hours.
Uncover and mix in pepper and onion.
Add sour cream and mix together,
Serve cold.
