Cold Bacon
Potato Salad

This makes for the best tasting salad.
You cook up some bacon and add it in,
but the secret is to boil the potatoes
in some of the rendered bacon grease.
That makes the potatoes extra yummy.

Ingredients
4 strips smoked bacon
6 potatoes, peeled
1 green onion, sliced
2 hard boiled eggs, chopped
3/4 cup mayonnaise
1 teaspoon Dijon mustard
Salt to taste
Ground black pepper to taste

Directions:
In a skillet cook bacon until crispy.
Drain, reserving 2 tablespoons grease.
Crumble bacon and set aside.
Place peeled potatoes in a large saucepan.
Cover with cold salted water.
Add the bacon grease and and
place over medium-high heat.
Bring to a boil and cook uncovered
until the potatoes are tender.
Drain and let the potatoes cool
and then cut into bite-size pieces.
Place bowl of potatoes in refrigerator
for 2 hours to chill out.
In a separate bowl, mix mayonnaise,
Dijon mustard, salt, and pepper.
Toss potatoes, onion, and egg in dressing.
Add crumbled bacon and serve chilled
on a bed of fresh green lettuce.
