Corn and Mint Salad

The flavors in this salad will amaze you.
Freshly picked sweet creamy corn and
fresh mint leaves, in a bowl with a sweet
vinegar dressing is out of this world good!
Add some fresh fruit like peaches it's great.

Ingredients:
2 ears of corn off the cob
3 fresh peaches, peeled and sliced
20 snips of mint leaves
10 snips of green onion tops
1 tablespoon sugar
1 tablespoon red wine vinegar
salt to taste
pepper to taste

Directions:
In a large bowl combine un-cooked
corn, mint, sniped mint and onion.
Add vinegar, salt, pepper and sugar,
mix well and let sit at room
temperature 1 hour. Add peaches.
Mix again, plate and serve.
