Fresh Mozzarella
Grape Tomato Salad

When the garden explodes with fresh
ripe grape tomatoes I make this salad.
It's got fresh mozzarella cheese and
colorful grape tomatoes in it.
You can also use cherry tomatoes.
Make sure the tomatoes are garden fresh.
Add three basil leaves on top as garnish.
Great with red wine and crusty Italian bread.

Ingredients:
6 red grape tomatoes
6 orange grape tomatoes
6 yellow grape tomatoes
8 ounces fresh buffalo mozzarella balls
2 bacon slices, cooked and crumbled
2 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
Salt to taste
Freshly ground black pepper
2 garlic cloves, peeled and crushed
1 teaspoon herbs de Provence
Fresh basil leaves, chopped
5 1/4 teaspoon Dijon mustard
Fresh basil leaves for garnish

Directions:
In a bowl make dressing by blending mustard,
balsamic vinegar, oil, seasoning and herbs.
Add drained mozzarella balls and tomatoes.
Plate and sprinkle crumbled bacon on top.
Garnish with some fresh basil leaves.
Serve as a side dish, salad or appetizer.
