I've been grilling fresh avocados
and like the way the outside gets
crispy while the inside stays creamy.
Here's two simple ways I grill it.
Chicken, avocado, and cherry tomato skewers.
Marinate the chicken in a lime-cumin vinaigrette.
Stick on metal skewers with chunks of avocado
and a few cherry tomatoes.
Brush with olive oil and grill until browned,
and serve extra vinaigrette for drizzling on.
Grill avocado and pineapple chunks.
Mix with minced jalapeno, or other hot chile,
hit of olive oil, lime juice and zest.
This makes a nice salsa to serve with
grilled scallops or other grilled fish.
