With cherry tomatoes getting closer
to being ripe in the garden I figured
it time for a recipe for grilled tomatoes.
The amounts to use depend on how many
fresh cherry tomatoes you are grilling.
Ingredients:
yellow tomatoes
red tomatoes
olive oil
sugar
salt to taste
pepper to taste
balsamic vinegar
chopped fresh basil
Garnish: fresh basil
Directions:
Cut tomatoes in half, thread onto skewers,
alternating colors with the flat side down.
In a bowl combine some olive oil, sugar,
vinegar, and basil; drizzle over kabobs.
Sprinkle with salt and pepper to taste.
Grill, covered over medium heat
10 minutes, turning skewers often.
Remove to plate and garnish with basil.
