Homemade
Fresh Mexi-Corn

This is an easy recipe for taking
sweet corn off the cob and making
it into a red pepper corn salad.
Easy to make and it freezes well.

Ingredients:
4 Fresh ears of corn
2 red bell peppers
salt to taste

Directions:
Place peppers in a glass bowl,
microwave on high power for 3 minutes.
Remove and cut into small dice.
Remove seeds if desired.
Cook corn in any method you choose to.
Remove corn kernals from the cobs.
In a bowl combine the corn and the pepper.
Add salt to taste, serve or place in plastic
freezer bags and freeze for future use.
