This is a really easy and tasty corn bread.
Canned Mexi-corn and Jiffy corn muffin mix
make this real fast to put together.
Ingredients:
1 can of mexicorn
1 package jiffy instant cornbread mix
1 egg
oil
Directions:
In a bowl make muffin mix following
package directions for johnny cakes
add an extra egg, drain mexicorn
add to bowl and mix well.
Grease #8 cast iron skillet,
add mix and bake until golden brown
and a toothpick comes out clean.
