Pasta Ricotta with

This is a simple recipe for a pasta
dish with ricotta cheese that you
don't sauce and bake in the oven like
you would when making a baked ziti.
I sometimes add some cooked sausage
crumbled up, but never any tomato sauce.

Ingredients:
1/2 pound pasta
2 cups ricotta cheese
cheese should be room temperature
salt to taste
black pepper to taste
water to boil pasta in
parmesan cheese, grated

Directions:
Bring salted pasta water to a rolling boil.
Cook pasta until al-dente, about 20 minutes
When the pasta is done, drain
and pour back into hot pot.
Immediately season with salt and pepper,
add ricotta cheese and stir well.
Serve in a dish or pasta bowl
and top with parmesan cheese.
