Peaches and Cream Cinnamon Omelette

The peach trees are loaded with peaches.
So here is a recipe for making a simple
yet very good peaches and cream omelette.

Ingredients:
1 tablespoon unsalted butter
2 eggs
2 tablespoons heavy cream
2 peaches sliced
cinnamon to taste

Directions:
Put the cream, peaches and cinnamon
in a small sauce pan and reduce down
until it gets thick and creamy.
In a saute pan make an omelette,
put peaches and cream in the
center of omelette and fold it over.
