Red Pepper, Carrot
and Cucumber Salad

Here is a good recipe for a very
colorful salad that tastes great.
The red pepper goes well
with the yellow of the carrot.
The taste is out of this world good.

Ingredients:
1/4 cup seasoned rice vinegar
1 tsp sugar or to taste
1/2 tsp vegetable oil
1/4 tsp ginger root grated
1/8 tsp salt or to taste
8 oz carrot sliced
1 oz green onion sliced
1 oz red bell pepper finely chopped
4 oz cucumber seeded and sliced

Directions:
Combine first 5 ingredients in a
medium bowl; stir with a whisk.
Add carrot and remaining ingredients;
toss to coat. Cover and chill 30 minutes.
